The oxygen in water interacts with aluminium to create a thin coating of aluminium oxide, which can be seen in the photo. Essentially, this layer stops aluminium from reacting further. Aluminium oxide may dissolve into the liquid if it is stored in an aluminium vessel for a long time. Since aluminium ions are toxic, water should not be kept overnight in metal containers due to the harmful ions.
